CHEESE PIE OR CHEESE BREAD OF THRACE

Ingredients

  • 400 gr. lukewarm water
  • 15 gr. yeast bower
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 800 gr. soft flour (approximately)
  • 500 gr. cheese
  • oregano
  • 1/2 cup olive oil

Directions

Place some of the flour, the yeast bower, the sugar and the lukewarm water in a bowl. Stir with a spoon. Add the rest of the flour and salt. The dough should stick to your hands. Knead well and gather the dough until it forms a ball. Place it in an oily bowl. Cover it and let it double in volume. Divide the dough into 4 parties. In a floured surface roll each piece of dough on a thick filo pastry. Dip your fingers into the oil and then lubricate the pastry very well. Place it in an oily 35 cm baking dish. Sprinkle with feta cheese and oregano. Make the next piece of dough with the same way and put it above. Continue until all the ingredients are finished. Hold the edges of the pastry and bring them in the center like a pouch. Turn the cheese bread upside down. Cover it for an hour until it inflates. Preheat the oven to 180° C and bake for approximately 1 hour.
