BRAISED CHICKED WITH SHORT – CUT PASTA

Ingredients

  • 1 country rooster or one big chicken chopped into portions
  • 1 chopped onion
  • 1/3 cup olive oil
  • 2 tablespoons tomato paste
  • 1 package crushed tomato
  • 2 bay laurel
  • 1 piece cinnamon
  • 3-4 spices
  • 500 gr. short – cut pasta
  • salt
  • pepper
  • grated feta cheese

Directions

Preheat the oil and turn brown the rooster’s pieces. Add the onion and let it become transparent. Add the pelte and rub it for 1´-2' to be cooked well and to release its perfume. Add the tomato and the spices in a pot with warm water until the rooster is covered. Lower the heat, cover it and boil it for approximately 1 hour and 15' in a low heat until it softens. At the end, add salt and pepper. Remove the spices. Let it soften and then place it in a platter. Add 1-1/2 liter boiled water to the sauce and as soon as it boils add the short – cut pasta. Boil it in a low heat for approximately 12' until the pasta turns to be porridge. Remove it from the heat, uncover the pot and let it absorb the sauce. As soon as it is ready, add the grated feta cheese. Stir and place the pasta in a platter. Serve with the rooster.
