LENTILS “MARRIED” WITH CARAMELIZED ONIONS

Ingredients

  • 2 tablespoon olive oil
  • 2 dry onions, chopped
  • 2 cup water
  • 4 vermicelli nest
  • 2 cup cooked lentils
  • salt, pepper
  • yogurt with mint
  • grated tomato
  • 250 gr. feta cheese crumbs

Directions

Heat olive oil in a pan and sauté the onions over medium heat for 10´ until they turn brown and caramelized. Remove half of the onions and keep them for later. Add the broken vermicelli. Add some water in the pan with the rest of the onions. Also, add salt and pepper and let it boil. Simmer it half – covered for 5´ - 6´. Add the lentils and stir for approximately 10´ until the liquids are absorbed. Don’t stir again. Serve the food and add the onions to equal portions per serving. You can serve it cold or hot. Another proposal is with yogurt dressing and fresh – chopped mint.
