OCTOPUS PILAW WITH TOUGH BARLEY

Ingredients

  • 500 gr. barley
  • 1 octopus 1 ½ kg chopped pieces
  • 1/2 cup olive oil
  • 2 chopped onions
  • 1 tablespoon tomato paste
  • 1/2 cup white wine
  • 2 pinches spices
  • 2 pinches gillyflower
  • 2 pinches cinnamon
  • 1 teaspoon sugar
  • fresh pepper
  • chopped parsley for
  • salt

Directions

Add in a pot the chopped octopus in medium heat until it dries. Then add the olive oil, the chopped onion and sauté the ingredients for 3´- 4´. Then pour the tomato paste and rub it in the pot, bake it for 2 minutes. Add the sugar and sprinkle with the spices. Pour the wine. Add 2 liters of water. Cover with a pot and braise for 40 ´ until the octopus is soft. Add the barley and lower the heat and braise for 12 ´ until the barley is ready. If it is needed add some water and stir it. Add enough pepper. Taste the food and if it is needed add salt. Sprinkle with chopped parsley and serve.
